Bon' Apple Crisp!

Guys, this recipe is so simple it's sinful... Sam had a whole bunch of apples and so I agreed to help him eat them. I know, I'm basically the best girlfriend ever. I love a good ole afternoon apple and firmly believe "an apple a day keeps the doctor away" but I'll be honest, I don't crave apples on a daily basis. So, how could I make apples a little lless .... boring. Apple pie, too sugary and advanced to tackle .... Apple crisp, oh yes.. I knew I was onto something. All I needed to do was make some simple ingredient swaps for healthier alternatives. Less sugar, check. Cleaner carb sources, check. Last but not least, switch ice cream out for plain greek yogurt, vanilla halo top or coconut milk ice cream alternative.

Bon' apple crisp! Enjoy!

Approx 6 servings

Ingredients

Apples :

6 apples

1 tbsp. pure maple syup

3 tbsp. water

2 tsp. cinnamon

Crumble:

1 cup old fashioned oats

1/2 cup almond flour

1/2 cup chopped walnuts (or any nut)

3/4 tsp. cinnamon

1/4 tsp. salt

1/4 cup melted coconut oil

1/4 cup pure maple syrup

Instructions:

1. Preheat oven to 350 degrees.

2. Dice apples into thin strips or cubes of equal size. In a large bowl, toss with maple syrup, water, and cinnamon. Pour apples into greased 9x9 baking dish.

3. Using the same bowl, mix oats, almond flour, nuts, cinnamon, salt, coconut oil and maple syrup. Stir crumble toping together and pour into baking dish on top of apples.

4. Bake at 350 degrees for 45 mins - until apples are soft, covering pan loosely with aluminum to avoid browning after 25 mins.

5. Scoop and serve!
