GLOW and Goat Cheese. Event Recap and Perfect Holiday Recipe to Razz Up Your Table!

This past weekend, I had the opportunity to cater a women's event at Nell Nation Fitness in Lapeer, MI. It was a day filled with pampering, followed by women sharing their stories of struggle, growth, and self acceptance. Yes, tears were shed and women left the gym feeling strong but this time, not in a physical post workout way. It was an excellent reminder to women that no matter the struggles that life brings your way, just look to your side. You are not alone. We must lean on each other for support and as Janelle's motto is for the gym and in life, we are STRONGER TOGETHER.


It was a wonderful opportunity to make d share a few of my Bireta Bites recipes with others! I couldn't help but crack up at some of the comments from attendees. They were shocked at how HEALTHY each recipe was, without sacrificing flavor and taste. Heck yeah, that's what I've been saying! I don't do boring and bland, nor would I wish that upon food for you.

The Baked Goat Cheese Roasted Cranberry Appetizer - from Honey and Birch was a FAVORITE of my fitness friends. Guys, like look at that bright bold red glistening against the gold table cover. Can you just feel the Christmas vibes? Can you see your green tree contrasting in the background and guests wander from conversation to chatter, a warm cup in hand, nibbling along the way?
It's everything you want out of a holiday appetizer: warm, sweet (but not because of added sugar and sweeteners), bold in flavor and so so savory - but this could just be my obsession with any and all things goat cheese talking. An added plus, it's vibrant color looks decorative and fancy. Shhhh, don't tell anyone how SIMPLE this is to whip up. It can be our little secret.
In case you are curious what I served it with - Trader Joe's Fruit Nut and Other Stuff Crisps!
Also tastes well with crackers (gluten free)/ crisps/ wheat thins.
I had a little bit leftover after the event, so I decided to experiment and guys, I think I struck gold. Who else loves chicken? Cool, almost all of you. Who else loves stuff STUFFED into their chicken? Like I said before, I'm all about goat cheese and it's a staple on my salad. Well, I added spinach to the cranberries and chunk of goat cheese that remained and mushed it all together. I sliced a chicken breast in half and then drizzled that bad boy in balsamic before cooking for 30 mins at 425 degrees. Not to toot my own horn but TOOT TOOOOOOT. It reminded me of Thanksgiving with a twist or an inside out salad. 10/10 will totally be making this again.. and again and again. Def has a pretty enough presentation for dinner guests or a party platter as a main dish!
